Low FODMAP Ground Beef & Green Leaf Salad
This salad is a delicious way to boost your daily intake of green vegetables. With minimal prep and cooking time, it’s a convenient recipe to keep in your repertoire for quick weeknight meals. The base is simple, but you can easily add other low FODMAP ingredients such as tomato, carrot, or cucumber for extra flavor and color.

Ingredients
- 1 pound (500g) Lean Ground Beef
- 4 ounces (120g) Mixed Green Salad Leaves
- 3/4 teaspoon Italian Herb Blend
- 2 tablespoons Shaved Parmesan Cheese
- Red Wine Vinegar
- Garlic and Onion Infused Olive Oil
Directions
- Divide the salad leaves into 4 serving bowls and drizzle with red wine vinegar so that everything is lightly coated.
- Drizzle a small amount of olive oil in a non-stick frying pan. Add the ground beef and herbs. Cook on a medium high heat breaking the beef up as it cooks through using a wooden spoon or spatula.
- Spoon mince evenly over the salad leaves in each of the serving bowels and top with the parmesan cheese before serving.
Notes
- This recipe works well with butter leaf lettuce or a combination of baby spinach and rocket.
- Ensure the infused oil is low FODMAP by only using a certified product.
